Lemon Meringue Pie

WOW! This was a hard one! Way too many steps for me, but it looks great! It tasted so good. Not too tart, but again my hubby approved and loved it!
You had to have to different recipes, one for the meringue & one of the lemon filling.

Beating the egg whites with the sugar mixture to make meringue. It turned from liquid to fluffy like substance, so fun!

All done! just brown the top like this!

Chicken Flautas - Stephen's cooking Skills

First off I cooked in the crock pot a whole chicken for about 4-5 hours on high with water, garlic, and salt & pepper. I seperated all the meat from the bones.
After chicken was done Stephen shredded all the chicken and rolled them all inside flour tortillas
Stephen then used toothpicks to hold them together while they were cooking in the hot oil in the skillet, on the stove. Cook until crunchy and warm all the way through. Remove toothpicks after cooked
Any condiments, like salsa and sour cream are very tasty with them.

Good Job honey!! Maybe you should be cooking not me :)

Pasta with Avocado & Tomatoes


In saucepan cook olive oil with fresh garlic until barely brown, then take off heat and add your cut up avocado, tomatoes, and basil.

This is the mixture before you add it to your pasta
You can either put it on top of mix everything together - while the pasta was still warm I put butter on it before I put the tomato/avocado mixture on top, so yummy. Sprinkled just some salt & pepper on top.
I think what I liked most about this recipe is it was simple and tasted so healthy and refreshing.

Cinnamon Sugar tortilla chips

Cinnamon Sugar Tortilla Chips

Thanks to my sister - in- law Miriam for giving me this idea and recipe.
All it is is flour tortillas cut up with butter and cinnamon sugar.
Heat oven to 350 and bake for about 12-15 minutes or until edges of chips are browning.
They turned out yummy and VERY easy.

Stuffed Bell Peppers

First hallow out the bell peppers

Cook 1lb ground beef or ground turkey (healthier)
Add 1 can of tomato sauce, onions, garlic, salt & pepper, and about 1-2cups of rice

Ready to go in the oven @ 350 degrees for 45 minutes (cover with tin foil first)

All done, ready to eat!!

My husband had never had stuffed bell peppers, but I hadn't had them since I was a kid, so it was fun to make them. He ate more then one so I guess they were good.

Pork Roast Sunday dinner

Crock pot Pork roast
I put the whole roast in the pot, added a whole chopped onion, salt & pepper and boiled it in apple juice & water. The house smelled so good when we got home from church. I cooked it on low for about 4 1/2 hours.


Out of the roast and ready to cut up and eat.

I cut up fresh zucchini and cooked it in butter and Lawrys seasoning on the stove.
And also added some mashed potatoes on the side

We had out friends over for Sunday dinner. Everyone said it was yummy. I am so proud :)

Homemade Chocolate Granola Bars

First time making granola bars. Its the exact way you make rice crispy treats. I can't wait to see what they taste like!

You just need 4 cups of mini marshmallows
1/4 cup or 1/2 stick of butter
6 cups of granola
And you can add anything from nuts, to dried fruit, to chocolate chips, etc.

First you melt the butter & marshmallows stirring constantly, it melts fast when you have the mini marshmallows.



Leave it on the heat and add the granola and mix it all together


Let it cool a little before adding things like chocolate chips. I am not a patient person so mine melted a little. Our Sunday school kids get to have these for their treat tomorrow, hope they like them.

Fresh Apple Pie

My First time making a fresh apple pie! I am so proud and the house smells so good right now.
Recipe from Betty Crocker Cookbook:

This was the longest part - peeling and cutting up all the apples. I had a huge bag of apples that I wasn't eating so I decided to put them to good use and make a pie

This was after I put in the entire filling - of course added butter on top before putting on the crust top layer

The finished product. I have not tasted it yet. I will edit the post late and let you know. Ill let Stephen try it :) I sprinkled a little sugar on top after it was done baking.

We tried it! It was yummy!!!! I am so impressed with myself. Stephen definitely approved too.

Banana Bread

Banana Walnut bread


I was very impressed with myself today. I made banana walnut bread. My husband Stephen liked it. It was nice to have approval. Thanks to Betty Crocker cookbook I was able to get a yummy recipe.

I was so happy to not waste my VERY ripe brown bananas! Used all of them in my bread and had everything else in my cupboards to finish it off.

Homemade BBQ chicken & sauce

(Not my picture - but it looked just like this)

I had a whole chicken with breasts, wings, thighs, legs, etc. I decided to BBQ it but I wanted some sort of flavoring. I didn't have an store bought sauce so I decided to make some. It was so easy and it tasted SOOOOOO good!

All it included was:
Ketchup
Worcestershire sauce
Soy sauce
brown sugar
cider vinegar
salt

It was really easy and really yummy!

Lind Family spaghetti sauce with pasta

My mom taught me to make homemade spaghetti sauce since I was a kid. I make it all the time now.


You need for servings of 4 people:

1lb of ground beef OR cut up italian sauage
1 onion
1 Teaspoon of minced garlic
2 cans of tomato sauce (canned)
1 can of tomatoes diced (canned) - fresh tomatoes taste great too!!
Salt & Pepper
Basil & Oregano

First cook the beef to a brown, then add garlic and onions, let cook for awhile then add everything else. Add the spices as much as you like depending on the taste that you like.

That is it! Now enjoy with your favorite pasta.
