To used our leftover ham from Christmas I cut it up into little pieces to make fried rice.
Ingredients:
2 cups of steamed rice
soy sauce
pepper
bag to chopped up mixed veggies (carrots, peas)
1/4 cup of chopped up green onions
6 eggs cooked scrambled and chopped in small pieces
First cooked my rice in the rice cooker
scrambled my eggs and set aside
Now I heat my frozen veggies with the green onion
To the veggies and green onion I now add my ham to let that heat up
Now I add my eggs to the mixture and my rice.
Add the soy sauce until the rice is slightly brown and some pepper. And all done :)
I started a cooking & baking blog because I reached a point my life where I have had to learn to cook more things from scratch. It has been difficult, but a good experience.

Chicken Pasta Stir Fry
Enjoy this tasty stir-fry made with chicken and pasta – ready for dinner in 30 minutes.
Ingredients
2 cups uncooked farfalle (bow-tie) pasta (4 ounces) 1 pound asparagus, cut into 2-inch pieces (3 cups) 2 medium onions, sliced 1 1/2 cups ready-to-serve chicken broth 2 cups cubed chicken 3 tablespoons chopped fresh or 1 tablespoon dried basil leaves 3 tablespoons chopped sun-dried tomatoes (not oil-packed) 1/4 teaspoon pepper Freshly grated Parmesan cheese, if desired
I used bell peppers instead of asparagus and I also substituted the dried tomatoes for freshly cute tomatoes.I used spaghetti noodles too, because I didn't have any bow ties.

Directions
- Cook and drain pasta as directed on package.
- Spray 12-inch skillet with cooking spray; heat over medium heat. Cook asparagus (bell peppers is what I used), onions and 1 cup of the broth in skillet 5 to 7 minutes, stirring occasionally, until liquid has evaporated.
- Add chicken; stir-fry about 5 minutes to heat through.
- Stir in remaining 1/2 cup broth, the basil, tomatoes, pepper and pasta. Cook about 2 minutes, stirring frequently, until mixture is hot. Sprinkle with cheese.

Dinner rolls from scratch
my attempt to dinner rolls
I used:
3 1/2 cups of all purpose white flour
1/4 c sugar
1/4 butter - softened
1 tsp salt
1 package of yeast
1/2 c very warm water
1/2c very warm milk
1 egg
(the recipe is from the Red Betty Crocker cookbook)
After kneading the dough I sprayed the pans and made them into balls. Let them rise and them bake on 375 degrees for 12 plus minutes
SO THIS WAS AN EXPERIMENT because I Haven't made yeast rolls in ALONG time! I didn't like them. They weren't soft, they weren't fluffy, and only one pan rose and the other pan didn't. They were too dense. I will have to try again.

Chicken Enchiladas
My mom taught me this recipe for chicken enchiladas. I used fresh chicken and left it in the crockpot so I could shred it off of the bone. In the past I have used canned chicken. I thought this tasted better.
First off you need:3-4lbs of shredded Monterrey jack cheese
2lbs of shredded chicken
1 diced up onion
1can of mild Enchilada sauce (or depending how spicy you want it)
1 little can of diced green chilies
Packages of corn tortillas
I soak my tortillas in the bowl of half of the enchilada sauce then I fill them with the mixture (chicken, onion, cheese, chilies)
I rolled them all up as tight as I can get them. I cover the top with the leftover enchilada sauce and the leftover cheese to try to cover the entire top. I usually add a little can of sliced black olives on top of the cheese.

Roasted Pumpkin Seeds
After carving our pumpkin we saved all the pumpkin seeds and put them into a strainer to rinse them off.
I put them in water in a saucepan with salt (depending how salty you want add more). I had to bring to a boil and them drain out the water.
Put them onto a pan with sides over the bottom with olive oil and lay the seeds on top of that in one layer. Bake on 350 degrees for 15-20 minutes or longer. Watch to see how brown they get.

Sweet & Sour Chicken
This is one of my favorite Chinese food dishes and I used to buy the sweet & sour sauce, but this time I made everything from scratch.
I used about 1-2lbs of boneless-skinless chicken cut into chunks. I cooked the chicken with a little bit of vegetable oil, then added about a teaspoon of minced garlic. Then added a small whole onion chopped up. Cook until browned or a little mushy (onions).Next, I added 3 green bell peppers chopped up in squares. I let the chicken with garlic, onions, and bell peppers cook for awhile while making the sweet and sour sauce
After you add the sauce to the chicken and veggie mixture add a can of chunk pineapple (drain the juice out first). Mix all together and let simmer for as long as you would like.
Serve over warm rice! It was yummy! I liked it better then buying the sauce :)
Making the sauce:

1 tablespoon ketchup
2 tablespoons cornstarch
Place sugar, vinegar, water, soy sauce, ketchup, and cornstarch in saucepan and heat. Bring to a boil and stir continuously until thickened.

Banana Cream Pie
My dad was in town so I wanted to make him his favorite pie. BANANA CREAM! With REAL whipped cream!First off you will need to buy a box of instant banana cream pudding mix. (3 cups of COLD milk) While your crust is baking in the oven let your pudding sit and cut up about 3-4 bananas.
Once your crust is cooled add a thin layer of pudding to the bottom. Lay all your bananas across the pudding, then add the rest of your pudding left on the top.
NEXT, make the real whip cream: a carton of whipping cream, powdered sugar and vanilla. In a mixer pour all of the whipping cream in and start mixing at FAST speed. Then add your powdered sugar (little at a time), and about a tablespoon of vanilla. The whipping cream is fine by itself but the vanilla and powdered sugar just add extra sweetness to your cream. I probably only added about 3/4 cup of powdered sugar.

Chocolate Chip Cookies
Thanks again to a sister in my ward for this recipe for chocolate chip cookies. The shape and taste of them turned out perfect. Sister Mary Barnum gets credit for this recipe. I tired another recipe in our ward cookbook.
1 Cup margarine
1 Cup sugar
1 Cup brown sugar
2 eggs
1tsp vanilla
3 cups of purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups of chocolate chips
Cook on 375 degrees for 10-12 minutes depending how soft or crispy you like them.

Chicken and Pasta -
I had put a chicken into the crockpot and honestly did not know what to do with it when it was done. So I decided okay, chicken with pasta is good. But then what type of sauce or dressing?? I just cooked in a saucepan on the stove olive oil, fresh garlic, balsamic vinegar, basil, and salt & pepper.
Took it off the heat and added fresh chopped up tomatoes and the chicken from the crockpot. It turned out pretty good considering I made it up last minute.

Oatmeal Raisin Cookies
Thanks to our ward cookbook I finally used one of the recipes for cookies. Thanks Sister Dougherty & Sister McClure.
The recipe was very simple, but make sure you have good size bowls (alot of ingredients)
3 cubes of butter ( I used margine because thats what I had)
2 cups of brown sugar
1 cup of granulated sugar
2 eggs
2 tsp vanilla
2 cups flour
6 cups oatmeal (rolled oats, old fashion)
2 tsp salt
1 tsp baking soda
And you can add raisins, chocolate chips, etc. Approx two cups or what you prefer
Bake 350 degrees for about 9 minutes - I was doing about 12-13 minutes, because I think I made my cookies bigger.Brooklind was trying to help out :)They turned out very yummy! My husband has been bugging me to make them and I finally did. It reminded me of my papa baking them because he used to make the BEST chocolate chip and oatmeal raisin cookies!!! I miss him :(

Homemade Lasagna
I FINALLY made lasagna! I have been wanting to for years and finally took the time to do it. I used my families spaghetti sauce recipe that I had put up in one of my first postings.First I laid out all my ingredients. Its much easier that way. I chopped up my whole onion and added it to the ground beef after the meat browned.
The sauce is all finished - I added onion, fresh minced garlic, can of tomatoes, 2 cans of tomato sauce, and sprinkle in as much salt, pepper, oregano, and basil as you would like.
In bottom of pan spray with cooking spray. Put a layer of sauce first. Then layer of noodles, then layer of ricotta cheese (which is mixed with mozzarella cheese and 2 eggs), then another layer of sauce, and repeat all. Add mozzarella cheese on the very top. Cover with tin foil before putting in the oven.

4th of July BBQ
Made Chicken & vegetable skewers to BBQ
The veggie skewers have zucchini, red bell peppers, and red onion. Veggies taste so good when grilled with tons of butter.

Turkey & mashed potatoes Sunday Dinner

Turkey breast was covered in butter and salt & pepper before we stuff it in the over @ 350 degrees for 2 hours.The whole spread with cranberry sauce and gravy. Great Sunday dinner!
